XO stands for Extra Old. We select beef from old Austrian dairy cows — animals that have lived full, working lives and whose meat has an extraordinary depth and intensity of flavor. This is the kind of beef that was once only available as a rare specialty in France or Spain. We brought it home to Austria.

XO Grill was born during the lockdowns, out of necessity and a love for extraordinary beef. XO stands for Extra Old — the dry-aged meat of old Austrian dairy cows, a product with an intensity of flavor rarely found in Austria. What started as a small operation selling smashburgers through a window on Gumpendorfer Strasse quickly became something special. The demand grew, our restaurants followed, and our XO Smash Burger was eventually voted the best burger in Europe. Today we have three locations in Vienna, each grilling on full throttle. In January 2026, we opened our third restaurant in the heart of Vienna's first district — Riemergasse 1, right between the most beautiful historic Aida café and the new Mandarin Oriental Hotel. Full circle. It's about time. It's about Beef.
